Classic Jerk Chicken

Smoky, fiery, and deeply satisfying — the Sunday staple that brings the islands to your table.

Method

  1. Marinate chicken pieces in jerk seasoning, soy sauce, lime juice, and a touch of brown sugar for at least 2 hours — overnight is best.
  2. Preheat oven to 200°C (180°C fan) or fire up the grill to medium-high heat.
  3. Place chicken on a lined baking tray or grill grate. Cook 35–40 minutes, turning once, until charred at the edges and juices run clear.
  4. Rest 5 minutes. Serve with rice & peas, fried plantain, and a fresh market salad.
